+1 for Majorca
However don't rule out basing yourself in the southwest of the island as the hills run along the west side. The advantage is that you have a shorter transfer and are nearer Palma (if you have the entertainment of others to think of). I would recommend looking at Port d'Andratx as ithe has the mountains just behind it and there's lots of good hills/routes around there
Majorca in March is very good. I have been organising a group for the last 4 years and only had bad weather on a single day.
Stay in Pollenca or Alcudia and you have access to the mountain range in the north and the rolling plains in the middle and south of the island. There are also a few punchy little climbs dotted over the island, most of which have a monastery atop for a little cultural viewing.
There is also a private company selling rider & bike transfers from Pollenca to the far side of the island (Andratx) giving you the chance to ride the entire spine of the mountain range.
There are plenty of private villas which if you are solo might not meet your needs. I stay in the Viva hotel chain on an all inclusive deal. The hotel also has a bike hire garage in the basement (rack space can also be hired) making it a worry free one stop shop for your cycling break.
We would usually set the week up something like this:
Day 1 - Arrival (super early flight), Set up bikes, 40 mile loop to Formentor Lighthouse
Day 2 - Climbing Day - Sa Calobra
Day 3 - Climbing Day - Orient, Soller, Puig Major
Day 4 - Flat Day - Rolling terrain down to Randa for the single climb
Day 5 - Climbing Day - Transfer to Andratx and back (several route options)
Day 6 - Flat Day - Arta taking in a short climb or two on the way.
Day 7 - Short ride to Sineu for a fast blast on the outdoor velodrome. Pack up and head home (evening flight).
Majorca in the North is just great. Geared up for cyclists, lovely roads, understanding drivers and all sorts of terrain. Pollenca or Alcudia.
