Yep I purchase them because they're pretty Vs any other perceived advantages for regular cyclists.
I got some Elite Vico carbon bottle cages for my 'nice' weekend carbon bike for around £15 each a couple years back. Weight saving is minimal but they look a bit slimmer/nicer. I wouldn't stress about it if cost is a consideration, plastic will be fine
I use King bottle cages....beautifully made, but something that grips your water bottle whilst it and the rest of my bike is being shaken to pieces on our crappy roads.....
Have also done a few Franco-Belgian cobbled sportives where the course was littered with water bottles - presumably from carbon/plastic holders...
Wouldn't look great against a carbon frame though...
All my bikes have alloy bottle cages except my best bike, which has carbon cages because a.) it suits the bike and b.) I'm a bit of a tart sometimes.

Carbon bottle cage - 18g / £25
Plastic bottle cage - 30g / £6
I know which one I'd go for...
