Im no fan of saddle bags as the don't look good on expensive bikes
I use a tool bottle, a 750ml one fits 2 tubes, 3 co2 canisters, multi tool, Tyre levers, spare split links etc.... and is also waterproof
to compensate for losing a water bottle i use a 1000ml water bottle on the other bottle cage and then if any rides which require more than 1000ml of fluid then i also carry a 500ml oasis, coke, pepsi (whatever spare bottle is to hand) in my jersey pocket
As soon as ive drunk 500ml out of the 1000ml bottle i pour the 500ml bottle into it and throw the 500ml bottle in the nearest bin
I've had 4 different ones now.
I really liked the tiny Lezyne one that velcros onto your saddle rails - however it didn't last long. It wore a hole in the bag itself and damaged the saddle rails where they met.
My (now) winter bike has a relative cheap (and decidedly large) saddle bag I think I ordered from Wiggle - I can 't remember who the manufacturer is atm. It doesn't look great if I'm honest but it does the job. One thing I noticed when giving the bike a going-over the other day, the multi-tool has started to corrode. That was a freebie that came with the bike so nothing special but it's something to bare in mind.
My new bike has a relatively svelte Topeak saddle bag, it's fairly unoffensive on the eye. I've got a multi-tool, spare tube, patches & tyre levers in there with plenty of spare room. This time around I've stored everything in sealed sandwich bags for ease of access and to keep the elements out.
A mate has one of these - stylish, super slim and discrete. You won't get your phone in there though.

I got the smallest lezyne bag they sell...in this I can fit a gel, a tube, patches, zip ties and a small multitool. It was pretty good tbf and never rattled etc
