Central and eastern Berkshire might not have the accessible climbing from London of the Surrey Hills, but venture slightly beyond the major urban areas westwards to Newbury and the Berkshire Downs and north to Henley on Thames and the southern Chilterns , particularly the Hambleden/Assendon Valleys and there is a climbers playground. Often see club rides out of west London in the area. I suppose the climbing won't be that dissimilar to either the South Downs or Surrey hills as it is ostensibly the same chalk terrain. Anyway here are few from the southern Chilterns. Happy to add a few from way out west if you would like.

Lots of good reading there! I felt for you on the big Brighton ride, I think you must have strayed on to the A27 just before Arundel, not nice! There is a coastal bike route all along the south coast but it gets very hard to find after Worthing; there are some private estates that back on to the beach and the signing gets sketchy.
Boxhill? I did a group Everesting nearly a year ago, 67 laps in 27 hours. I wish I could get the legs back I had a month after!

Edit, getting Coombe and Hound House lane confused. That one seems to go on forever.
Might be a little bit far north for you, but I can strongly recommend the Torture 40 (although the original segment has bad gps data and the replacement has a less than catchy name!):
