Continental Double Fighters (27.5"x2.0" or 700x38mm*). Have them on on a vintage MTB, and gravel hybrid. Fast, tough, grippy and happy with all really wet mud. For that I'd be going full knobbly and putting suitable cross tyres on.
* the official size is '28x1 3/8 x 1 5/8', which makes no sense to me, so translated to metric.
700c Schwalbe G One Bite 38mm
650B Schwalbe Hurricane 2.00 inch (probably too big)
700/650b WTB Resolute TCS 42mm
700c/29" Schwalbe Smart Sam 35mm/44mm
