It's a bit further away but Stan's Cycles in Shrewsbury is now a Trek store and just across town is Dave Mellor Cycles who sells loads of Giant & Specialized. Dave really knows his stuff and will always go out of his way to help a customer. I can't be sure that either will give you a proper test ride but the staff in both are very helpful - worth a phone call, if nothing else. Each is a short walk from the train station (a 40 minute journey from Wolverhampton).

Not checked if they stock what you're looking for but Evans will let you book a test ride.
Never ridden the trek but I have the Giant Defy and its fantastic. I would go for discs over rim brakes any time. Actually I will never buy a rim brake bike ever again. If you are a size medium to XL i would see if its possible to increase your budget to the defy adnvanced 3. Its available for under £1200 at the moment.
