I stumbled across these guys yesterday who look interesting. Amsterdam in a weekend
https://www.moreadventure.co.uk/event/cycle-amsterdam-in-a-weekend/
London to Harwich is 85 miles. It would be cheaper I assume to kit your bike with a rack and panniers and do it your self. I understand the group ride/social element, but if costs are an issue then well prepared solo is the only option.
A little Google search
This company charges £499 for one way trip(price includes overnight ferry-which is £41 for passenger plus bike(bunk or seat sleeping?Add £35 for bunk bed)) No overnight hotel in Amsterdam!

Buy a decent rack and panniers for £150, do it yourself, stay in nicer places and cycle back for less than one way organised tour!
