Next bike recommendations please!

I am a 42 year old male who has taken to cycling late in life. I bought a new Scott Speedster X60 a year ago and I've enjoyed riding it. I am now looking to move up to something a bit better and have around £1000 to spend but could go a bit higher for the right bike. There is so much choice at this price range. I could stick with Scott of course but I am interested in what you guys in the forum think I should move up to. If it makes any difference I am 6'1" and fairly heavily built. I am a novice so be gentle with me!

Have a look at the rosebikes website, they have some exceptionally good deals, sub 7 kilo bike with full ultegra and mavic kysrium wheels for ~£1350...they also have a similar 105 bike for £1100. These are both properly good bikes that won't give you upgradeitus within a year  16

Also have a look at planet x, they have some decent carbon frames with decent specs for good prices, just be careful with the actual specs as they often sub in cheap parts in less visible places....

Have a play with the Ribble bike builder (http://www.ribblecycles.co.uk/pu/road-track-bike/bike-builder/bikebuilder/1) or Dolan version (http://www.dolan-bikes.com/road/road-bikes.html) to see what you can get for your money.

Canyon endurace. £1300 carbon frame and 105 groupset. Then you have a spare bike for winter/ commuting/ whatever.

Or maybe I could upgrade the group set and wheels? Shimano 105 are available at around £250 and a new set of rims maybe the same? So, to upgrade or buy new.
