North Catalonia. Quiet, beautiful, smooth tarmac, very little traffic, good food and a wide variety of terrain. Think towns like Olot, Ripoll, Vic, Lleida, Manresa, Berga. Avoid Girona, too busy and lots of traffic.
And I'm biased, I live here and it's awesome.
If you have a really strong aversion to hills, you could try the Danube cycle path to Vienna from Passau or Linz or wherever (work out how much you want to ride per day, planning on finishing in Vienna). Extremely picturesque, with some variety as you proceed. Obviously this isn't quite what you asked for as it would entail leaving the motor home at the start, finding places to stay along the way (this should be easy and not expensive, although it might still be an expense you don't want to incur), and getting the train back to your starting point for the drive home, but I thought I'd suggest it as a very pleasant ride, particularly if your companions are even less used to cycling than you.
(Full disclosure: I'm half-Austrian, so perhaps somewhat biased towards the charms of that country. )
I'm married to a Bavarian and know the German end of this route rather well. It is very pretty countryside, B&Bs along the route are relatively cheap and the beer is very good. Austrians are also very friendly towards tourists (more so than Bavarians), which even my German wife concedes. Flying to Munich isn't costly and getting from there to Passau is relatively easy.
And from personal experience I rode this a couple of years ago and had a wonderful time
How about you go for it and get yourself to the alps? Stunning scenery, weather variable but can be good and roads like nothing in the UK. I know you said no monster climbs but I managed a couple of cols last summer after 9 months of road biking. The climbs aren't that steep but are long and it's a real buzz getting to the top.
Failing that- the Vosges? Lovely Alsace wine villages and impressive but not too crazy hills.
The New Forest... Ha! Although it gets a rather hefty amount of negative press, the cycling is actually pretty impressive if you want to avoid big hills!
The NIMBYs are no where near as bad as they are made out to be to everyday cyclists, they just get offended by the huge events in the area. Theres plenty of quiet roads, beautiful scenery and fantastic rides in The Forest!
