Nothing I can recommend but enjoy your new bike when it comes. It's great getting a new bike!
I am a total newbie, but was drawn to the Triban 500 SE too, for its specs for price and good reviews. For similar money to the DEFY 5 (£500 from my LBS)the Alur 700 (£599) is worth a look.
As I said, I'm totally new, so pinch of salt advised
How did your bike get stolen?
Any of those bikes you mentioned will get stolen if you don't lock up properly outside.
If you commute and lock your bike outside instead in the office then probably go for some second hand rusty.
Anyway I will chose the Defy 5.
I can recommend the Defy 5 as that's what I ride. As my first road bike for years I find it more than adequate. The only thing that I have upgraded so far are the wheels, after some toe rag rear ended me buckling the wheel, he thought it was a funny thing to have done.
