Bike Science in Brizzle as suggested above - good luck finding them though, I walked past 5 times before I found them - theyre hidden in an wing of an old building next to the hotel du vin, small bike science sign in yellow on the wall.

Cyfac offer a postural fitting system at selected dealers in the U.k
The two places i am aware of are LifecycleUk in east anglia and Boutique cycles.
It worked wonders for my time trialling position and i'm about the go for the road too.
Again, not south west (but easily accessible from the M4) is the Bike Whisperer in Ealing, London (http://www.thebikewhisperer.co.uk/) - reasonable prices and great service. You can have as many follow-ups as you like for 3 months after the fitting, so tweaking the position is easy if you feel you need to (I didn't, and he sorted out a recurring knee issue I was having, for which I am eternally grateful).

He did a great job sorting out my bike set up and eliminating my knee problems.
I have no experience of these folks but they are in the South West, centre of Bristol by Hotel du Vin / Evans cycles.
