Have just come back from a weekend in Puerto Pollenca. We used Rentmarch, which offered us Trek Madone 3.5s with Ultegra chainset and 105 brakeset for 72 euros for 3 days.
Generally well-maintained, although the pads needed a good scrub before they worked smoothly.
Pollensa Cycle Centre (in Puerto Pollensa) is excellent - great bikes (Kuota/Moser/Swift) which are all very well maintained. It's run by the Miquel Cerda and his sons - very efficient and friendly. Not so sure about Pro Cycle Hire - they do have a good reputation but I have travelled to Mallorca a couple of times now and members in my group have had issues with them - bikes not ready and, on one occasion, minus a cable! Great bunch of guys though and the issues sorted relatively swiftly - they just seem a bit overwhelmed by the demand which is not surprising given the hordes of cyclists that seems to grow year on year!
I found a small local bike hire shop called Pepe in Palma Nova who hires out by the day for 20-30 euros.
I'd also recommend Pro Cycle Hire in Port de Pollensa. Send measurements on online and voila, bike is ready to go.
There's always that question - should I take my own bike or hire, well in Majorca the bikes are cheap enough and good enough to hire.

Max Hurzeler's shops are also very good and all over the island. Cube's their thing. Great shops too, great value own brand kit.
