Funny that because if I had a Cube Peloton Race I'd be more than happy to exchange it for a Dawes Super Galaxy!
Unless it's vintage a used bike in good condition is worth 40-50% of it's RRP.
To be facetious, it's worth what someone's prepared to pay.
As a starting point though, there was a 2012 'non-super' on CTC the other week for £600: http://forum.ctc.org.uk/viewtopic.php?f=40&t=85981&p=775683&hilit=galaxy...
And of course you can always search completed sales on FleaBay: http://www.ebay.co.uk/sch/i.html?_sacat=0&_from=R40&LH_Complete=1&_nkw=d...
From past observations, the new parts on a used bike appear to have negligible effect on the selling price, so while it may help sell it, I wouldn't expect to recoup those expenses.
Good luck with the sale!
